Dr Omotade Richard Ogunremi is a Senior Lecturer in the Department of Biological Sciences, First Technical University, Nigeria. He holds a PhD degree in Food Microbiology and Biotechnology from the University of Ibadan, Nigeria. His research focuses on microbial ecology of traditional fermented foods, starter-culture and functional food development and food safety. Dr Ogunremi has continued to explore food fermenting microorganisms for potentials to optimize fermentation processes and improve quality and functionality of food products. Consequently, he has several original research articles in high impact peer reviewed journals. In addition, he serves as reviewer for some journals, including International Journal of Food Microbiology, Biotechnology Advances, Food Biotechnology and Journal of the Science of Food and Agriculture. He was a Department of Biotechnology-The World Academy of Sciences (DBT-TWAS) Sandwich Postgraduate Fellow at Council for Scientific and Industrial Research (CSIR)-Central Food Technological Research Institute, Mysore, India and a Swiss Government Excellence postdoctorate researcher at Zurich University of Applied Sciences, Wadenswil, Switzerland.
Dr Ogunremi developed methods for high-throughput screening of fermenting microorganisms for functional properties and development of functional foods. He is a recipient of several international travel grants to participate in conferences and workshops. He is passionate about exploring and exploiting the microbial world to create wealth and provide sustainable solutions to food security challenges in sub-Saharan Africa.
