Dr Martin Mutambuka hols a PhD in Food Science and Technology from Iowa State University, USA, and is currently a Lecturer at the Department of Food Technology, Kyambogo University, Kampala, Uganda.
Previously, he worked for the Ministry of Trade as well as a Leibniz-DAAD Postdoctoral Fellowship at the German Research Centre for Food Chemistry, Freising, Germany.
Dr Mutambuka's current Research interest focuses on chemistry, specifically the characterization of aroma active compounds in East African Highland cooking bananas. He also has an interest in gluten-free baking technologies and retort packaging technologies, as emerging technologies to add value to local Ugandan produce.
