Dr Akanbi graduated from the University of Ife (now Obafemi Awolowo University, Ile-Ife) with Second Class (Upper Division) in Food Science and Technology (1980) and MSc in Food Process Engineering at National College of Food Technology, Weybridge (University of Reading, 1982) and PhD Procter Department of Food Science, University of Leeds (1985). Dr Akanbi joined the services of the then University of Ife in January 1986 and rose through the ranks to the post of Professor. He served as the Head of Department twice, first in the acting capacity and then in full capacity. He also served as the Deputy Provost and Provost of Postgraduate College. He enrolled as a student member and served in the body till. He became a Fellow of the Nigerian Institute of Food Science and Technology. He has been a reviewer for many international and local journals. His area of focus is food processing and food process engineering with a strong bias in unit operations.
