My research focus is in the area of extraction and quantification of bioactive components and other micronutrients from underutilized tropical fruits and vegetables. Also to characterize properties of bioactive compounds as affected by processing and storage in a structure-function relationship to apply the extracts in the protection of lipids and proteins against oxidation and alleviation of malnutrition and food insecurity in sub-Saharan Africa.
