I completed a BSc, MSc, and PhD in Food Technology at the University of Ibadan, Nigeria (2005, 2008 and 2017, respectively). I currently lecture at the Department of Food Technology, University of Ibadan, and have been since 2018. I previously worked as a principal research officer at the National Horticultural Research Institute, Ibadan (2012-2018), and at the Federal Institute of Industrial Research, Oshodi (FIIRO), Lagos (2009-2012). Presently, I am involved with and supervising projects in the areas of food product development, processing, and food analysis. My research focus is in the area of extraction and quantification of bioactive components and other micronutrients from underutilized tropical fruits and vegetables. Also to characterize properties of bioactive compounds as affected by processing and storage in a structure-function relationship to apply the extracts in the protection of lipids and proteins against oxidation and alleviation of malnutrition and food insecurity in sub-Saharan Africa. I am a fellow of the prestigious African Women in Agricultural Research and Development (AWARD, 2013).
